We’re excited to share that Hammett’s Monastik has officially been awarded the EcoCook® certification—a globally recognised program that highlights sustainability in the hospitality industry. It’s a big step forward for us, and one we’ve worked hard to achieve.

Our Commitment to Sustainable Dining in Malta

From the beginning, sustainability has guided how we run our kitchen. Inspired by the way monasteries once operated, making the most of what was available and wasting nothing, we’ve built our approach around local, seasonal produce, preserved ingredients, and nose-to-tail cooking. That means using every part of the animal, working directly with Maltese farmers, and creating simple, flavourful dishes with minimal waste.

One of our proudest achievements is how we manage food waste. We weigh everything after each service, using that data to refine how we prepare, portion, and store. It took time and training, but the results are clear: we’re wasting less and cooking smarter.

We’re also embracing technology and using our digital platforms to share progress with our community. It’s all part of our ongoing commitment to being an eco-conscious restaurant in Malta.
